How to tell the freshness of eggs

Tonight I found myself in a predicament.  I found my yogurt in the fridge was a week expired.  That led me on a Google hunt to find out if it was still ok to eat!  (It was by the way)  I also discovered a neat tip about how to tell the freshness of eggs!

  1. Fill a deep bowl with water
  2. Slowly and carefully place the egg in the water
  3. Observe what the egg does
  • A very fresh egg will immediately sink to the bottom and lie flat on its side.

 

  • As the egg starts to lose its freshness and more air enters the egg, it will begin to float and stand upright. The smaller end will lie on the bottom of the bowl, whilst the broader end will point towards the surface. The egg will still be good enough to consume, however, if the egg fully floats in the water and does not touch the bottom of the bowl at all, it should be discarded, as it will most likely be bad.
  • A bad egg will also feel extremely light in weight and give off a pungent smell.

 

Now that you know what level of freshness your eggs are you can determine what to do with them.

  • Very fresh eggs are ideal for frying or poaching
  • Less fresh eggs should be used in sauces, dessert mixtures or omelets, where the shape and texture of the egg is not as noticeable.

Crescent Roll Veggie Pizza

I’ve dug out a cookbook that has a collection of recipes from my grandma and her friends tonight.  I decided to make the Crescent Roll Veggie Pizza!  I just LOVE crescent rolls and this is one of my favorite recipes!  I hope you enjoy it as much as I do!  It’s super easy and quick to make and is always a great hit when bringing for gatherings!

Crescent Roll Veggie Pizza
Ingredients
  • 2 cans crescent rolls
  • 8 oz cream cheese
  • 1 cup mayo
  • ¾ tsp garlic powder
  • ¾ tsp onion powder
  • 1 tsp dill weed
  • ½ tsp salt
  • 1 cup broccoli
  • 1 cup cauliflower
  • 1 cup carrot
  • 8 oz bag of grated cheese
  • Any other veggies you like

Instructions
  1. Press rolls into jelly roll pan to form a crust.
  2. Bake as directed.
  3. Mix cream cheese, mayo, and spices.
  4. Spread on cooled crust.
  5. Finley chop veggies.
  6. Sprinkle on vegetables and press gently into mayo mixture.
  7. Sprinkle grated cheese on top.

Chocolate Chip Cookie Dough Bars

For today’s Easter gathering with my family I decided to bring a dessert.  So I made these amazing Chocolate Chip Cookie Dough Bars!  They’re super easy to make, and for me I love them so much because the ingredients are things I always have in my cupboards.   I decided against taking a picture because they’re not super amazing to look at, but I guarantee the taste will amaze you!

Chocolate Chip Cookie Dough Bars
Ingredients
  • 2¼ cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup butter, softened
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 6 oz milk chocolate chips

Instructions
  1. Preheat Oven to 375 F
  2. Beat together butter, sugars and vanilla extract in a large mixing bowl until creamy.
  3. Add eggs in one at a time, beat well.
  4. Add flour, baking soda and salt, mix well.
  5. Add milk chocolate chips.
  6. Pour in a 9 x 9 glass baking pan and bake for 30 minutes or till middle has set.

Yummy cake like baked donuts!
Ingredients
  • 2 cups all-purpose flour
  • ¾ cup white sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon salt
  • ¾ cup milk
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoon melted butter

Instructions
  1. Preheat oven to 400 degrees F.
  2. Lightly grease a doughnut pan.
  3. In a large bowl, mix flour, sugar, baking powder, nutmeg, and salt.
  4. In a small bowl milk, eggs, vanilla and butter.
  5. Beat in liquid mix with dry mix until well blended.
  6. Fill each doughnut cup approximately ¾ full. Bake 8 to 10 minutes in the preheated oven, until doughnuts spring back when touched.
  7. Allow to cool slightly before removing from pan.
  8. Topping Ideas
  9. Dip the donuts in melted butter and then sprinkle with cinnamon and sugar
  10. Spread chocolate frosting or Nutella on top

Easy Morning Glory Muffins Recipe! So GOOD!!!

I am in LOVE with this recipe!  The taste, the smell……simply YUM!!!  I got it over at Allrecipes.com, which is probably my favorite recipe site. 

Easy Morning Glory Muffins

Ingredients

2 cups all-purpose flour
1 1/4 cups white sugar **I cut this in half**
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 cups shredded carrots
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup unsweetened flaked coconut
1 apple – peeled, cored and shredded
3 eggs
1 cup vegetable oil  **I substituted and used 1 cup of unsweetened applesauce**
2 teaspoons vanilla extract

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.

In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, coconut, and apple.

In a separate bowl, beat together eggs, oil (applesauce), and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.

Bake in preheated oven for 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Check out the reviews for the recipe to see what others thought of it!  You can also get ideas on altering the recipe too, reading the reviews is where I found to substitute the oil for applesauce and cut the sugar in half!
